Ingredients

1 c. plus 2 Tbsp. sugar
3 Tbsp. flour
2 1/2 c. milk
3 eggs, separated
1 tsp. margarine
1 1/2 tsp. vanilla
1 can flaked coconut
Preparation

Sift 1 cup sugar and flour together; add to milk.
Beat egg yolks; add.
Cook until mixture begins to thicken.
Add margarine, 1 teaspoon vanilla and coconut.
Reserve enough coconut to sprinkle on top.
Cook until thick.
Pour into pie crust.
Beat egg whites until thick; add remaining sugar and vanilla.
Beat until stiff.
Put on pie; sprinkle with reserved coconut.
Put in oven and brown.
