Mingea'S Prize Winning Pepper Relish - cooking recipe

Ingredients
    24 green peppers, coarsely ground
    1/2 c. salt
    7 or 8 medium onions
    1 qt. vinegar
    2 c. sugar
    1 tsp. salt
    1 tsp. mustard seed
Preparation
    Drain juice off ground peppers.
    Add 1/2 cup salt to enough water to cover peppers.
    Let sit 2 or 3 hours or overnight and drain.
    Grind onions.
    Mix with ground peppers.
    Add vinegar, sugar, 1 teaspoon salt and mustard seed.
    Cook over medium heat in heavy pot about 1 1/2 hours, until glazed looking.
    If watery, dip some liquid off.
    Seal in jars.
