Romaine Lettuce Soup - cooking recipe

Ingredients
    3 to 4 c. romaine lettuce, chopped fine
    1 c. water
    2 1/2 c. chicken broth
    1/2 c. canned evaporated milk or cream
    1 Tbsp. chopped onion
    1 Tbsp. butter
    nutmeg, salt and pepper to taste
    croutons for garnish, browned/buttered
Preparation
    Cook lettuce and water in pressure cooker for 5 minutes.
    Heat onion in melted butter until soft over low heat.
    Add to lettuce and water.
    Add remaining ingredients.
    Simmer 10 to 15 minutes. Put croutons on top.
    Makes 6 servings.
