Best Ever Fried Rice - cooking recipe

Ingredients
    2 eggs
    2 tsp. peanut oil
    2 c. cooked rice
    1/3 c. chopped scallions
    1/3 c. chopped carrots (matchstick strips)
    1 to 2 Tbsp. soy sauce
    1/3 c. cooked ham, chopped (optional)
    1/3 c. frozen peas, defrosted (optional)
Preparation
    Arrange all ingredients for easy access.
    Whisk eggs together in a small bowl.
    Preheat wok or skillet on medium to medium-high heat.
    Add peanut oil and heat 1 minute.
    Then add eggs and let cook for 1 minute, without stirring, or until top is moist and bottom is cooked.
    Add rice and toss with eggs, coating rice with moist egg while chopping in cooked egg.
    Stir-fry for 2 minutes, then add scallions, carrots and ham.
    Stir-fry for 2 to 3 minutes more.
    Add peas and soy sauce; toss until heated through.
    Serves 4.
