Low Cholesterol Cake - cooking recipe

Ingredients
    1 c. raisins
    2 c. water
    1/4 c. canola or other oil
    1 c. sugar
    2 c. sifted flour
    1 tsp. nutmeg
    2 tsp. cinnamon
    1 tsp. baking soda
    1/2 c. nuts (optional)
Preparation
    Grease an 8 or 9-inch square pan; set aside.
    Preheat oven to 350\u00b0.
    Simmer raisins and water together for at least 5 minutes; drain.
    Measure liquid.
    Add enough water to bring liquid to 1 1/2 cups.
    Add the oil to liquid.
    Sift together the sugar, flour, spices and soda; mix well, then add raisins.
    Add the liquid and oil mixture, stirring quickly but thoroughly.
    If nuts are used, add them last.
    Pour into baking pan; bake until cake tests done (usually 30 to 35 minutes).
    Powdered sugar may be sprinkled over the top.
