Heavenly Rice Pudding - cooking recipe

Ingredients
    1/2 c. cold cooked rice
    1 1/2 c. diced marshmallows
    1/2 c. well-drained crushed pineapple
    1/4 c. chopped maraschino cherries
    1/4 c. chopped nuts
    2/3 c. undiluted evaporated milk (Carnation)
    2 Tbsp. lemon juice
    1/2 c. powdered sugar
Preparation
    Mix cold cooked rice, marshmallows, pineapple, cherries and nuts in a bowl.
    Chill evaporated milk in refrigerator tray until soft ice crystals form around edges of tray (15 to 20 minutes). Whip until stiff (1 minute).
    Add lemon juice; whip very stiff (2 minutes).
    Beat in powdered sugar.
    Fold whipped Carnation into rice mixture.
    Spoon into serving dishes.
    Makes 6 servings.
