Mini Applesauce Muffins - cooking recipe
Ingredients

1 1/4 c. wheat germ
1 1/4 c. quick cooking or old fashioned oats
1 c. all-purpose flour
1/2 c. packed brown sugar
1 tsp. baking soda
1/2 tsp. salt
3/4 c. unsweetened applesauce
1/2 c. light corn oil spread (1 stick), melted
1/4 c. thawed frozen egg substitute
1 tsp. vanilla
Preparation

Preheat oven to 400\u00b0.
Spray 36 (1 3/4-inch) muffin pan with nonstick cooking spray.
In large bowl, mix wheat germ, oats, flour, brown sugar, baking powder and salt.
In medium bowl, mix applesauce, corn oil spread, egg substitute and vanilla until blended.
With wooden spoon, stir applesauce mixture into flour just until flour is moistened.
