Roasted Garlic Mashed Potatoes - cooking recipe

Ingredients
    1 head garlic, outer skin removed
    6 oz. small shallots, peeled and trimmed
    1 Tbsp. olive oil
    3 1/2 lb. baking potatoes, peeled and cubed
    1/4 c. butter or margarine, softened
    1 1/4 c. warm milk
    2 tsp. salt
Preparation
    Heat oven to 450 degrees.
    Place garlic and shallots in a 8-inch square baking pan; drizzle with oil.
    Cover with foil and roast 40 minutes, turning shallots occasionally, or until they are tender and golden.
    Cool.
    Squeeze garlic cloves from skins, place in food processor with roasted shallots and any remaining oil in pan. Process until smooth.
    Can be made ahead; cover and refrigerate 24 hours.
