Coconut Cream Pie(Makes One 9-Inch Pie) - cooking recipe

Ingredients
    1 c. plus 2 Tbsp. flour
    pinch of salt
    6 Tbsp. lard or solid vegetable shortening, at room temperature
    3 Tbsp. ice water (approximately)
    1 c. sugar
    1/4 c. cornstarch
    pinch of salt
    3 c. milk
    4 eggs, separated
    1/4 c. butter, softened
    2 c. shredded coconut, lightly toasted in oven *
Preparation
    *To toast, spread on baking sheet.
    Place in 350\u00b0 oven for 4 to 5 minutes, stirring once, until light brown.
