Pineapple Lime Salad - cooking recipe

Ingredients
    1/2 c. unsweetened pineapple (canned), diced
    1 tsp. celery, diced
    1 tsp. pimento, chopped
    1 Tbsp. vinegar
    1 envelope lime flavored artificially sweetened gelatin
    1/2 c. hot water
Preparation
    Dissolve the gelatin in hot water.
    When it begins to set, add the fruit, celery and pimentos which have been marinated in the vinegar and salt.
    Put into two individual molds and let stand until set.
    Unmold and serve on crisp lettuce leaf.
    Yield:
    2 servings.
