Shrimp, Spinach And Cheese Souffle - cooking recipe
Ingredients

1/4 c. butter or margarine
1/4 c. all-purpose flour
3/4 c. milk
1/2 c. grated Parmesan cheese
1 c. finely chopped spinach
1 (4 1/2 oz.) can shrimp, rinsed, drained and finely chopped
5 egg yolks
5 egg whites
Preparation

In a saucepan, melt butter or margarine.
Blend in flour.
Add milk.
Cook and stir until bubbly.
Remove from heat; stir in cheese.
Fold in spinach and shrimp.
Beat egg yolks 5 minutes or until thick and lemon colored.
Stir in shrimp mixture.
Wash beaters and in large mixer bowl beat egg whites to stiff peaks. Gradually fold egg whites into shrimp mixture.
Turn mixture into an ungreased 1 1/2-quart souffle dish.
Bake in 325\u00b0 oven for 50 to 55 minutes or until knife inserted near center comes out clean. Serve immediately.
Serves 4 to 6.
