Pollo Bueno - cooking recipe

Ingredients
    6 chicken breasts
    1 small chopped onion
    1/2 c. flour
    2 c. chicken broth
    2 crushed garlic cloves
    3 c. steamed rice
    12 corn tortillas
    2 Tbsp. chili powder
    2 c. shredded low-fat cheese
Preparation
    Preheat oven to 350\u00b0.
    Stew chicken; bone it and set aside. Skim fat from chicken broth and use broth to make chili.
    Brown flour in skillet.
    Add chili powder and stir in broth; simmer, stirring, for 10 minutes, until thicken.
    Place corn tortillas, one at a time, in boiling water for 5 to 10 seconds to soften. Layer corn tortillas, chicken, rice, onion and cheese.
    Cover with chili; garnish with additional cheese.
    Bake for 20 minutes. Serves 8.
