Ingredients

1 1/2 c. flour
2 1/2 tsp. baking powder
3/4 tsp. salt
3 Tbsp. sugar
1 well beaten egg
3 Tbsp. melted shortening
about 1 1/4 c. milk
Preparation

Sift flour, baking powder and salt.
Combine egg, milk and melted shortening (slightly cooled).
Amount of milk to use will depend upon thickness of pancakes desired.
Three-fourths cup of milk will give thick cake, 1 1/4 cups milk will give thin cake. Pour into flour mixture and stir just enough to moisten the dry ingredients.
After mixing ingredients, bake on hot griddle. Makes 1 to 1 1/2 dozen cakes.
