Squash Delight - cooking recipe
Ingredients

2 lb. yellow squash
1 tsp. sugar
1/2 c. onion, chopped
1/4 green pepper, chopped
1 c. mayonnaise
2 eggs
1 c. grated cheese
1/2 c. pimento
1/2 c. pecans, chopped
1/2 stick butter
salt
pepper
Preparation

Cook squash until tender.
Drain.
Add butter and mash.
Mix eggs, sugar, mayonnaise, nuts, salt, pepper and cheese.
Add to squash.
Pour mixture into buttered casserole.
Top with bread crumbs and grated cheese.
Dot with butter.
Decorate with pecans. Bake at 350\u00b0 for 35 to 40 minutes until brown.
