Green Tomato Relish - cooking recipe

Ingredients
    1 1/2 gal. chopped green tomatoes
    3 qt. onions, chopped
    3 qt. green peppers, chopped
    1 pt. hot peppers or less
    3/4 c. salt
    8 c. sugar
    1/2 gal. vinegar
Preparation
    Chop
    tomatoes\tfirst
    in
    enamelware pan and pour salt over. Let
    stand\twhile chopping\tonions\tand
    peppers.
    When everything is
    chopped, pour briny water off tomatoes and add all ingredients
    together and simmer slowly until peppers and tomatoes are
    tender
    and change color.
    Do not overcook.
    Do not boil. Makes 14 pints.
    Very good with fish.
