Mock Fried Chicken(Heart Healthy) - cooking recipe

Ingredients
    1/4 c. 2% milk
    1/4 c. dry bread crumbs
    1/8 tsp. nutmeg
    1/2 tsp. salt (optional)
    1/4 c. yellow corn meal
    2 Tbsp. chopped fresh parsley
    1/2 tsp. pepper
    1 chicken (3 1/2 lb.), cut into 8 pieces and skinned
    2 1/2 to 3 lb. broiler-fryer chicken, cut up
    1/2 c. all-purpose flour*
    1 tsp. salt
    1/2 tsp. paprika
    1/4 tsp. pepper
    salad oil
Preparation
    *If using self-rising flour, decrease salt to 1/2 teaspoon.
