Marinated Grilled Vegetables - cooking recipe

Ingredients
    2 c. eggplant, cut in 3 x 1-inch sticks
    1 c. zucchini, sliced 1/4-inch
    1 c. yellow squash, sliced 1/4-inch
    1 c. red bell pepper, seeded and cut in chunks
    1 red onion, cut in 1/4-inch slices
    1 1/4 c. red wine vinaigrette dressing
Preparation
    Toss all vegetables in 1 cup dressing. Allow to stand at room temperature for 1 hour.
    Grill vegetables 2 to 3 minutes per side, basting with vinaigrette.
    Toss veggies in remaining dressing. Serve as a side dish with any entree.
    Yields 6 servings.
