Ingredients

4 large sweet potatoes
3 Tbsp. melted butter
1 tsp. salt
1 Tbsp. brown sugar
1 tsp. orange juice
1 c. shredded coconut
6 slices canned pineapple
melted butter
Preparation

Boil potatoes until tender; mash and beat in melted butter and salt, brown sugar and orange juice.
Shape into 6 balls.
Roll balls in coconut moistened with 1 teaspoon melted butter.
Dip pineapple slices in melted butter and place on baking sheet.
Put a potato ball in center of each pineapple and brown in moderate oven about 15 minutes.
