Lemon Meringue Pie - cooking recipe

Ingredients
    1 1/4 c. sugar
    1/4 c. cornstarch
    3 Tbsp. all-purpose flour
    1/4 tsp. salt
    1 1/2 c. cold water
    4 large egg yolks
    1/2 c. fresh lemon juice
    2 Tbsp. unsalted butter
    1 1/2 Tbsp. grated lemon peel
Preparation
    For filling:
    Mix first 4 ingredients in a heavy medium saucepan.
    Gradually whisk in water.
    Set over medium high heat and boil 1 minute, stirring constantly.
    Whisk in some yolks in bowl to blend.
    Gradually whisk in some hot cornstarch mixture. Return mixture to saucepan, boil until very thick, stirring constantly about 5 minutes.
    Remove from heat; whisk in juice, butter and lemon peel.
    Cool completely.
    Spoon filling into crust.
    Cover and chill while making meringue.
