Best Bean Soup - cooking recipe

Ingredients
    1 lb. dry navy beans (2 1/2 c.)
    1 c. potatoes, diced
    1 c. carrots, diced
    1 c. onions, finely chopped
    2 c. tomatoes, finely chopped or 1 (16 oz.) can
    1/2 c. salad oil
    2 cloves garlic, finely chopped
    salt and pepper to taste
Preparation
    Soak beans overnight.
    Next day, using soaking water and enough extra water to cover, if necessary, cook beans over medium heat for 1 hour.
    Add all other ingredients and cook 1 more hour or until everything is tender.
    Makes 4 to 6 servings.
