Cucumber Relish - cooking recipe
Ingredients

4 c. coarse ground unpeeled cucumbers
1 c. coarse ground green peppers
1/2 c. coarse ground sweet red bell peppers
3 c. coarse ground onion
3 c. finely diced celery
1/4 c. salt
3 1/2 c. sugar
2 c. white vinegar
1 Tbsp. celery seed
1 Tbsp. mustard seed
Preparation

Use a coarse grader or grinder for vegetables.
Combine all vegetables in large pan.
Sprinkle with salt; cover with cold water.
Let stand 4 hours.
Drain thoroughly in colander.
Press out all excess liquid.
Combine sugar, vinegar and seed.
Bring to a boil and stir until sugar is dissolved.
Stir in drained vegetables and let simmer 10 minutes.
Pack in hot jars.
Yield:
6 pints.
