Sausage Eggplant Casserole - cooking recipe

Ingredients
    6 Tbsp. butter
    5 c. diced, peeled eggplant
    1 lb. loose sausage or 2 c. ground beef
    2 onions, sliced
    1 1/2 c. canned tomatoes
    1 c. grated cheese such as Cheddar
    salt and pepper
    1 c. fine bread crumbs
Preparation
    Melt 3 tablespoons of butter in skillet and add eggplant. Cook 5 minutes.
    Add sausage to skillet and cook thoroughly.
    Salt and pepper to taste.
    Mix together onion, tomatoes and cheese, reserving a little of the cheese.
    In a greased casserole, alternate layers of tomato, onion, cheese mixture with layers of eggplant, sausage mixture.
    Mix crumbs with remaining cheese and sprinkle over casserole.
    Dot with butter.
    Bake at 375\u00b0 for 35 minutes.
