Tabbouleh - cooking recipe

Ingredients
    2/3 c. fine bulgur
    3 medium size tomatoes, finely chopped
    3/4 c. finely chopped fresh parsley
    1 medium size onion, finely chopped
    4 Tbsp. fresh lemon juice
    1 1/2 tsp. salt
    4 Tbsp. olive oil
    1 1/2 Tbsp. finely chopped fresh mint
Preparation
    Place the bulgur (crushed wheat) in bowl and cover with cold water.
    Let soak for 10 minutes; then drain.
    Wrap bulgur in cheesecloth and squeeze vigorously until dry.
    Drop bulgur into a deep bowl; add tomatoes, parsley, onions, lemon juice and salt. Toss gently but thoroughly, mixing together with a fork.
    Just before serving, stir in the olive oil and mint.
    Taste for seasoning.
