Potato Mushroom Bake - cooking recipe

Ingredients
    6 to 8 medium potatoes (3 lb.)
    1 clove garlic
    8 oz. fresh mushrooms, sliced
    1/2 c. butter or margarine, divided
    1 c. light cream
    2 egg yolks
    1/4 c. parsley, snipped
    1 c. soft bread crumbs
Preparation
    Preheat oven to 350\u00b0.
    Grease a 2-quart casserole dish.
    Peel potatoes; cook with garlic in boiling salted water.
    Meanwhile, saute mushrooms in 2 tablespoons butter until tender.
    Drain potatoes; discard garlic.
    Whip potatoes with 1/4 cup butter, cream, egg yolks, 1 1/2 teaspoons salt and dash of pepper.
    Stir in mushrooms and parsley.
    Spoon into casserole.
    Melt rest of butter; toss with bread crumbs.
    Sprinkle over potatoes.
    Bake for 25 to 30 minutes.
    Serves 8.
