Sausage - cooking recipe

Ingredients
    10 lb. fresh ground pork
    6 1/2 tsp. salt
    1 tsp. red pepper
    8 tsp. black pepper
    9 tsp. sage
Preparation
    Boil a salted hogs head, cut up , until tender.
    Drain thoroughly.
    Remove bones.
    Grind or cut up remaining meat until fine.
    Press into a flat container until \"set.\"
    Slice and pour diluted vinegar over.
