Apple-Carrot Muffins - cooking recipe

Ingredients
    2 c. all-purpose flour, sifted
    2 tsp. baking soda
    1/2 tsp. salt
    2 tsp. cinnamon
    1 c. sugar
    2 c. grated carrots
    1 large green tart apple, peeled and grated
    1/2 c. raisins
    1/2 c. almonds
    1/2 c. flaked coconut
    3 eggs, slightly beaten
    2/3 c. vegetable oil
    2 tsp. vanilla extract
Preparation
    Combine first five ingredients, then add liquids.
    Stir until moist.
    Spoon into greased muffin pan.
    Bake at 350\u00b0 for 20 minutes or until done, yields about 2 dozen.
