Spinach Meatballs With Fresh Tomato Sauce - cooking recipe

1/2 c. regular long grain rice
2 medium bunches spinach
1 large onion
olive or salad oil
1 tsp. dried basil leaves
1/4 tsp. pepper
salt
1 lb. ground beef
1 lb. ground turkey
2 Tbsp. grated Parmesan cheese
1 large egg
3 large tomatoes (about 1 3/4 lb.)
2 tsp. sugar
1/2 tsp. dried oregano leaves
shaved Parmesan cheese (for garnish)
Preparation

One half hour before serving, in a 1-quart pan, prepare rice as label directs without adding butter.
Set aside.
Wash well and drain spinach. Remove and discard tough stem.
Chop half the spinach and set remaining half aside.
Chop onion.
