Black-Eyed Texan Casserole - cooking recipe
Ingredients

1 lb. ground beef
1 onion, chopped
1 c. cooked rice
2 cans black-eyed peas with jalapeno peppers (I use 2 c. fresh and add peppers to taste)
2 (16 oz.) cans tomatoes, chopped
1 c. shredded cheese
garlic salt to taste
pepper to taste
Preparation

Brown beef and onion. Drain. Blend all ingredients in casserole and top with cheese. Bake at 350\u00b0 for 30 to 45 minutes until cheese is bubbly. Serve with cornbread.
You have
a complete meal.
Great for leftover peas and rice.
