Red Beans And Rice - cooking recipe
Ingredients

4 c. dry red beans
2 Tbsp. bacon fat
1 medium onion, chopped
2 c. (16 oz.) canned tomato sauce
1 tsp. salt
1/2 tsp. black pepper
1 Tbsp. vinegar
1 tsp. Tabasco sauce
1 tsp. crushed red pepper flakes
1/4 tsp. thyme
1 1/2 to 2 lb. meaty ham hocks
3 c. cooked rice
1/4 c. chopped onion
1/2 lb. sausage, cooked and sliced into 1-inch rounds
Preparation

Clean and wash beans.
Soak overnight.
Drain water.
In a heavy pot, heat the bacon fat.
Saute onions until wilted.
Add beans, tomato sauce, salt, pepper, vinegar, Tabasco sauce, red pepper and thyme.
Add enough water to cover beans.
Simmer until beans are semi-cooked, about 30 minutes.
Remove 1 cup of beans, drain and mash or blend.
Return to pot along with ham hocks and cover/cook on low for 2 hours.
