Gourmet Roast - cooking recipe

1 standing rib roast
salt and pepper to taste
Preparation

Let meat stand at room temperature for 1 hour before cooking. Preheat oven to 375\u00b0.
Rub meat with seasoning and place, fat side up, in a shallow roasting pan.
Do not cover; do not add water. Cook 1 hour and turn off the heat.
Do not open oven until serving time regardless of length of time the meat is in the oven.
Turn oven on again 30 to 40 minutes before serving time, but reset temperature to 375\u00b0.
The roast is now ready to serve.
