Potato Chowder(Vegetarian) - cooking recipe

Ingredients
    3 Tbsp. oil or margarine
    1 1/2 c. diced onions
    1 1/2 c. sliced celery
    1 c. chopped green pepper
    1 c. chopped carrots
    2 cloves garlic, minced
    6 c. water
    1 1/2 tsp. soy sauce
    1 (28 oz.) can tomato puree
    1 tsp. basil
    1/4 tsp. pepper
    1 tsp. salt
    1/2 tsp. sugar (optional)
    4 c. potatoes, cubed
Preparation
    In a large soup pot, saute vegetables.
    Add water, potatoes and seasonings.
    Bring to a boil.
    Cover and simmer 20 minutes or until vegetables are tender.
    Add tomato puree.
    Cover and simmer 15 more minutes.
