Minestrone - cooking recipe

Ingredients
    3 c. mixed dried beans (1/2 c. each: Great Northern, lima, red, pinto, pink and garbanzo beans)
    1/2 c. olive oil
    3/4 c. finely chopped onion
    2 cloves garlic, minced
    1/4 c. chopped parsley
    1 1/2 c. chopped celery and leaves
    2 (1 lb.) cans tomatoes, quartered, or can of paste
    salt
    2 c. shredded cabbage
    2 c. finely sliced zucchini, carrots or turnips
    1/2 tsp. pepper
Preparation
    Wash and drain beans.
    Put in large, heavy kettle with 3 quarts water.
    Bring to boil and boil 2 minutes.
    Remove from heat, cover and let stand 1 hour.
    Bring to boil, cover and simmer 1 1/2 hours or until tender.
