Squash Fritters - cooking recipe
Ingredients

2 c. cooked yellow squash, mashed
2 eggs, beaten
1 small onion, chopped
salt and pepper to taste
1/2 c. cracker crumbs
hot vegetable oil
Preparation

Combine squash, eggs, onion, seasonings and cracker crumbs. Mix well. Drop mixture by tablespoonfuls in hot oil. Cook until golden brown.
