Vidalia Onion Casserole - cooking recipe
Ingredients

1/3 c. butter or margarine
4 medium Vidalia onions, sliced in 1/4-inch rings (make sure onions are sweet and mild)
15 saltine crackers, crumbled
1 can cream of mushroom soup
2 eggs, beaten
1/2 to 3/4 c. milk
1 c. shredded sharp Cheddar cheese
Preparation

Melt butter in large frypan and saute onions over medium heat until clear.
Save 3 tablespoons cracker crumbs for top and place balance of crumbs in bottom of lightly greased 2-quart dish.
With slotted spoon, dip out onions and place on crumbs.
Mix soup, milk and beaten eggs and pour over top with cheese and remaining crumbs.
Bake at 350\u00b0 for 20 to 30 minutes or until brown and bubbly.
Serves 4 to 6.
