Orange-Glazed Chicken - cooking recipe

3 boneless skinless chicken breasts, cut into thin strips or 3/4 lb. chicken tenders
1 Tbsp. oil
1 1/2 c. chicken broth
1/2 c. orange juice
2 Tbsp. reduced sodium soy sauce
1 Tbsp. cornstarch
1 Tbsp. brown sugar
1/2 tsp. ground ginger
1/2 tsp. garlic powder
1 pkg. (8 oz.) frozen snap peas, thawed and drained*
1 pkg. (10 oz.) frozen deluxe baby carrots, thawed and drained*
1 1/2 c. Minute instant brown rice*

*Vegetables can be left out or use green garden peas (frozen, 1 cup) and carrots cut into thin rounds.
