Grandma Falk'S Baked Eggplant - cooking recipe
Ingredients

1 eggplant
1 large onion, chopped finely
3 Tbsp. butter
1 beaten egg yolk
1 c. bread crumbs
salt
pepper
Preparation

Peel eggplant.
Cut up and cook in salted water until tender. Drain in colander.
Put in bowl and chop with knife.
Cook chopped onion in butter until tender, but not brown.
Add to eggplant. Next, add beaten egg yolk, bread crumbs, salt and pepper.
Place mixture in buttered baking dish; sprinkle with bread crumbs and dots of butter.
Bake 20 to 30 minutes at 350\u00b0.
