Shrimp And Pineapple Salad - cooking recipe
Ingredients

1 pineapple
6 oz. shrimp
6 radishes, diced
6 thick slices cucumber
6 Tbsp. mayonnaise
1 Tbsp. lemon juice
8 small new potatoes (about 1 lb.)
1 lb. green beans
1 large Bermuda onion, thinly sliced
1/2 c. pitted black olives, chopped
1/4 c. chipped Italian parsley
pinch of salt
1 tsp. pepper
2 c. shredded lettuce
4 eggs, hard-cooked and quartered
4 tomatoes or 16 to 18 cherry tomatoes
1 green pepper, cut into thin rings
1 (12 oz.) can solid white tuna
1 (2 oz.) can anchovies (optional)

Probably the most famous of all composed salads is this one of tuna and vegetables.
It is a perfect luncheon dish, or it may be served in small portions as a first course.
