any size rib roast or rump roast
Preparation

Let roast stand at room temperature for at least 1 hour. Preheat oven to 375\u00b0.
Place meat in shallow pan.
Do not cover or add water; cook 1 hour.
Turn off heat but do not open oven at any time until ready to serve.
Regardless of how long meat has been in oven, turn oven to 375\u00b0 40 minutes before serving.
Do not preheat.
Always medium-rare regardless of size of roast.
