Short Cut Chili Sauce - cooking recipe
Ingredients

3 qt. peeled and chopped tomatoes
2 c. chopped celery
2 c. chopped onions
1 c. chopped green pepper
1/4 c. salt
2 c. sugar
1/4 c. brown sugar
1 1/2 tsp. black pepper
1 1/2 tsp. mixed pickling spices
1 c. white vinegar
Preparation

Combine tomatoes, celery, onions, pepper and salt.
Let stand overnight.
Drain in colander, but do not press.
Place vegetable mixture in large kettle.
Add sugar, brown sugar, pepper and spices (tied in a cheese bag) and vinegar.
Bring to a boil; reduce heat and simmer uncovered for 15 minutes.
Ladle into jars and seal; process in boiling water bath 15 minutes.
Makes 5 1/2 pints.
