Irish Potato Cake - cooking recipe
Ingredients

2 cups sugar
1 cup butter
4 eggs, separated
1 cup sour cream
2 squares chocolate, melted
1 cup chopped walnuts
1 cup chopped raisins
1 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. baking soda
1/2 tsp. ginger
1/2 tsp. salt
1 cup hot mashed potatoes
3 cups all-purpose flour
Preparation

Grease and flour tube pan and set aside.
Mix baking soda and sour cream.
Cream butter and sugar.
Add egg yolks, sour cream mixture, chocolate, walnuts, raisins and vanilla.
Mix well.
Sift together flour, cinnamon, salt and ginger.\tAdd to creamed mixture.
Add mashed potatoes.
Mix well.
Beat egg whites and gently add to batter.
Pour into tube pan and bake at 350 degrees for 1 hr. and 30 minutes or until tester comes out clean.
