Banana Split Cheesecake Squares - cooking recipe

28 squares low fat honey grahams, finely crushed (2 c.)
1 c. sugar, divided
1 tsp. vanilla
1/3 c. melted oleo
3 8 oz. pkg cream cheese, soft
3/4 c. egg substitute or 3 eggs
1 c. strawberries, halved
1/2 c. mashed bananas
1 8 oz pineapple chunks, drained
1 banana, sliced, dipped in lemon juice to prevent browning
Chopped walnuts & melted semi-sweet chocolate, opt.
Preparation

Mix graham cracker crumbs, 1/4 c. sugar and melted oleo. Line bottom of 9x13 inch baking pan with foil for easy removal of squares.
Press crust mixture on bottom of baking pan.
Blend cream cheese, remaining sugar and vanilla in bowl with mixer at medium speed.
Add eggs & mix will blended.
Stir in mashed banana.
Pour into crust.
Bake at 350\u00b0 for 30 mins. or until center is almost set.
Remove from oven.
Cool.
Refrigerate 12 hours or overnight.
Top with strawberries, sliced banana and pineapple.
Sprinkle with nuts and drizzle with melted chocolate if desired.
Cut into squares.
