Eggplant Casserole - cooking recipe

Ingredients
    5 to 6 slices bread, toasted and cut into small pieces
    1 medium eggplant, cubed and parboiled
    1 lb. hot sausage, cooked and drained
    1/2 c. diced celery
    1/2 c. diced pepper
    1 c. chopped green onions
    1 c. stewed tomatoes, drained
    1 c. sharp cheese, cut into small pieces
Preparation
    Grease 2-quart baking dish; cover bottom with bread pieces. Top with eggplant, celery, pepper and onions, sausage and tomatoes.
    Cover and bake at 350\u00b0 for 45 minutes.
    Add remaining bread crumbs and cheese.
    Return to oven 3 or 4 minutes until cheese melts.
