Italian Chicken And Bric - cooking recipe

Ingredients
    2 whole chicken breasts, deboned and cut into 1 1/2-inch cubes
    1 medium zucchini, sliced
    1/2 c. chopped onion
    1 (16 oz.) can tomatoes, undrained and chopped
    2 Tbsp. chopped dried parsley
    1/2 tsp. salt
    1/4 to 1/2 tsp. pepper
    1/4 tsp. oregano
    3 c. cooked rice (basmati rice is best)
Preparation
    Coat large skillet with cooking spray.
    Saute chicken until lightly browned.
    Add zucchini.
    Cook until tender-crisp.
    Stir in remaining ingredients.
    Cover.
    Reduce heat and simmer 15 minutes or until heated through.
    Yields 6 to 8 servings.
