Fluffy Potato Casserole - cooking recipe
Ingredients

2 c. hot or cold mashed potatoes (leftovers may be used)
1 (8 oz.) pkg. cream cheese
1 small onion, finely chopped
2 eggs
2 Tbsp. flour
salt and pepper to taste
1 c. crushed potato chips
Preparation

Put potatoes in a large bowl.
Add cream cheese, onion, eggs and flour.
Beat at medium speed until blended.
Put on high speed and beat until light and fluffy.
Add salt and pepper.
Spoon into a greased 9-inch casserole dish.
Sprinkle potato chips atop potatoes.
With a knife, poke crumbs into potato mixture.
Bake, uncovered, for 35 minutes in a 300\u00b0 oven.
