Bleu Cheese Baked Potatoes - cooking recipe
Ingredients

4 (8 oz.) Idaho potatoes
2 Tbsp. unsalted butter
2 cloves garlic
1/2 c. sour cream
2 oz. Bleu cheese
1 Tbsp. parsley, chopped
1 Tbsp. plus 2 tsp. snipped fresh chives
salt and pepper

Preparation

Preheat oven to 375\u00b0.
Prick the potatoes all over.
Bake 1 1/4 hours or until done.
Melt butter; add finely minced garlic and cook over very low heat for 1 1/2 minutes.
Cool potatoes slightly.
Cut a lengthwise slit in top of each and remove pulp. Mash the potatoes and add garlic, butter, sour cream, cheese, parsley, one tablespoon chives, salt and pepper.
Stuff into potato skins and sprinkle tops with paprika.
Bake 15 minutes. Sprinkle with remaining chives.
