Chiles Rellenos Casserole - cooking recipe

Ingredients
    6 beaten eggs
    3 c. (24 oz.) cream-style cottage cheese
    3/4 c. finely crushed rich round crackers (Hi Ho, etc., 18 crackers)
    4 Old El Paso green chilies, seeded, rinsed and chopped
    3/4 c. Cheddar cheese, shredded
    3/4 c. Monterey Jack cheese, shredded
Preparation
    Mix beaten eggs, cream-style cottage cheese, crushed crackers, green chilies, shredded Cheddar and Monterey Jack cheese (save half of cheese to put on top).
    Bake in 325\u00b0 oven for 45 minutes or until inserted knife comes out clean.
    Sprinkle remaining cheese over the top, return to oven to melt, 2 to 3 minutes.
    Let stand 5 minutes before serving.
    Serves 6. Note:
    Could add some ground beef, cooked and drained.
