Brown Rice Plus - cooking recipe

Ingredients
    2 c. cooked brown rice
    1 c. chopped green onion
    1/2 c. each broccoli and green beans or 1 c. of either
    2 Tbsp. butter
    2 tomatoes, chopped
    1 c. shredded Cheddar cheese
    1/2 to 3/4 c. minced parsley (optional)
    1 medium garlic clove, minced
    salt and pepper
Preparation
    Saute onions, broccoli and green pepper in butter, about 3 minutes.
    Mix in rice, tomatoes, cheese, parsley, garlic, salt and pepper to taste.
    Cook 4 minutes longer, covered, until vegetables are tender-crisp.
    Serves 4.
