Cajun Style Venison - cooking recipe

Ingredients
    4 to 5 lb. venison roast
    3/4 c. flour
    oil
    1 can Ro-Tel tomatoes
    1 large chopped onion
    3 cloves garlic
    salt and red and black pepper to taste
Preparation
    Season meat with salt and peppers.
    Dredge meat completely with flour. Brown in hot oil. Remove to baking pan prepared with heavy-duty aluminum foil large enough to completely seal meat. Place remaining ingredients on and around meat.
    Seal foil and bake at 350\u00b0 for 1 1/2 hours.
    Remove meat from pan. Let gravy thicken. Serve over rice.
