Yellow Squash Casserole - cooking recipe
Ingredients

3 c. cooked squash, mashed
1 medium carrot, grated
2 oz. jar pimento
1 can cream of chicken soup
1/2 chopped onion
1/2 pt. sour cream
1 c. shredded Cheddar cheese
3 c. crushed Ritz cracker crumbs
2 1/2 sticks margarine, melted
Preparation

Mix margarine and cracker crumbs together and set aside.
Mix all other ingredients, then mix in crumb mixture, leaving enough to spread on top.
Bake 35 minutes or more if needed at 350\u00b0 until nicely browned.
