Fluffy Potato Casserole - cooking recipe
Ingredients

2 c. hot or cold mashed potatoes (leftovers okay)
1 large (8 oz.) pkg. cream cheese (room temperature)
1 small onion, finely chopped
2 eggs
2 Tbsp. flour
salt and pepper to taste
1 c. crushed potato chip crumbs
Preparation

Put potatoes in large bowl.
Add cream cheese, onion, eggs and flour.
Beat at medium speed of electric mixer until ingredients are blended.
Then turn on high speed and beat until light and fluffy.
Taste and add salt and pepper as needed.
Spoon into a greased 9-inch baking casserole.
Sprinkle chip crumbs atop potatoes.
With knife, poke some of crumbs into potato mixture. Bake, uncovered, in 300\u00b0 oven for about 35 minutes.
